Baked Chicken and Potato Casserole

Thank you Bee for the nice recipe.

Thanks Liz. :)

Wow, I can only imagine the fat/calorie content! Sounds delish, but couldn’t it worth with less butter?

You can use less butter I added more because I love butter, lol.

Is the chicken and potatoes raw when you put into the dish and they cook with everything else? Than You, Bobbie

Yes, they were raw.

can i use something else besides heavy cream?

You can use milk but not as great.

Could you post Kuih Chang recipe? I am a Melaka native and I miss kuih chang Nyonya. Found some dried bamboo leaves and bunga Telang, so I want to make my all time favorite. Thanks a million.

Made this today for me and my daughter and we loved it. It took a bit longer to cook as I used a slightly smaller baking dish and struggled to make one layer of chicken and potatoes, this is very tasty and will definaltly be making again. ( Thankyou for the tip with the bacon, I crisped it up first and it gave great texture to the finished dish)

Hi Faye, so happy that you enjoyed this baked chicken and potato casserole.

Does the chicken need to br cooked before putting in casserole?

No.

This looks delish!!!Looking forward to making this but want to double the recipe for my large family… Do I also double the cook time??

Thank you!!!

Not really, you can put in two trays and bake at the same time. :)

I made the Loaded Baked Potato & Chicken Casserole, it was great. Not sure why they call it baked since you don’t have to bake the potato’s. I would make this again, it is a keeper. Thank you

Thanks Barbara, glad that you love this baked chicken and potato casserole.

You’ve never done such a casserole before this one, but this casserole looks successful. I’m hungry now and that’s because of your casserole:)

I just made this and it was so so good!! Didn’t change a thing….thank you!!!

Thanks Pam for trying my baked chicken and potato casserole recipe!! :)

It I wanted to do a casserole such as this one, but instead of chicken use ground meat, what changes, if any, would you do to the recipe?

Thanks!

I think chicken meat is preferred I don’t think ground chicken would be great for this recipe.

What is heavy cream

Heavy whipping cream.

I have just discovered your site today, but I will be a loyal follower, to be sure. You have some great recipes and ideas and I plan to try them. Thanks for your good work and beautiful pics

Thanks Ruth for being a new fan! :)

This sounds lovely. Going to give this a go. thanks for sharing this recipe.

Simon

Sounds delicious. This probably wouldn’t freeze well with the potatoes?

We made this for dinner tonight. I only had duck bacon, so that’s what we used. It was delicious! Thanks for sharing your recipe :)

Oh my goodness! I’m a picky eater and do not eat combined food or even let the different foods touch on the plate. It looked great for my son and husband though so I made it (intending to eat chicken). But I tried it to make sure it the chicken was good and I loved it! It didn’t matter that it was a casserole. My husband put ranch on his and even took it to work with him the same night. I made the recipe exact except I doubles everything and used a whole bag on cheese. I did sprinkle garlic powder, salt and pepper on top of everything before I put it in the oven. This was to die for! Thanks for the recipe

Thanks Alexa for trying my baked chicken and potato casserole recipe. :)

Does this freeze?

Yeah, you can freeze this dish and defrost and heat up before eating.

What is the purpose of the sugar? For a main dish I’m just concerned it would be sweet.

Sugar gives this dish a perfect balance of flavors, trust me.

Is there supposed to be so much liquid, mine isnt really creamy, followed it exactly how you have it.

Hi Jasmine there is no liquid in the recipe except 1/4 cup heavy cream which isn’t much. Did you pat dry your chicken and potatoes? The end result should be exactly like my pictures.

Will the chicken be overcooked since it is baked for more than 1 hr? The potato is layered as on potato, chicken, potato, then chicken?

No the chicken are not overcooked.

Could this be done as a crockpot meal?

Yes you can but make sure the potatoes are not mushy and break up as it will affect the taste and texture!

I will be honest. I have never made a casserole in my entire life but there is always the first time, right? And my virgin homemade baked chicken and potato casserole was a smash hit with the family. Mr. Rasa Malaysia and Little G loved and enjoyed the dish.

There is nothing not to love about this super delicious recipe—chicken, potato, heavy cream, and topped with tons of cheddar cheese and bacon. Add all the best ingredients into one pan, and baked to golden perfection. The top of the casserole is slightly crusty with the cheddar cheese, but beneath the surface are moist, juicy, cheesy chicken meat, plus soft and tender baked potato chunks. Are you hungry now? I bet you are, especially after looking at the pictures here.

This baked chicken and potato casserole recipe is quite simple and I learned it from Delicious As It Looks. You don’t need a whole lot of seasonings but salt, pepper, and a little sugar. Easy peasy and you can sit watching your favorite TV show when the casserole is working its magic in the oven.

The casserole is easy and amazing, and the leftover is perfect for my pre-schooler’s lunch box tomorrow. Try it for your family and I am sure they will be begging you for more!
