In a skillet over medium heat, cook the sausages until they are browned and cooked through. Remove from skillet and set aside on a plate.
Whisk eggs, milk, maple syrup, cinnamon and salt in a large bowl. Trim each slice of bread into a 2” X 4” rectangle and then flatten using your fingers or a rolling pin.
Starting at one end, roll the bread around a sausage and press to seal. Place in the milk mixture and let sit for 5 minutes. Repeat with remaining sausages.
Melt 2 tbsp of butter in a non stick skillet. Place 6 sausages in the pan at a time and cook until browned on each side, flipping often. Repeat with second batch of sausages and then serve with a sprinkle of icing sugar and maple syrup.
