Power Green Salad with Pear and Blackberries

What a pretty salad, Marcie! I often go through withdrawals too when I haven’t had enough salads! This power version looks perfect! I love that you paired it with pears and blackberries. So good for a fall meal!

Thank you, Gayle! I’ve been eating this so much lately!

Hmmm I totally agree with you: some great ingredients to play around with! I can’t wait to get into the “fall spirit” with cooking (lasagna, yes please!) but on the other hand I don’t want to say goodbye to my Summer dishes yet such as salads. So I think this is a great combination for me! Have a great week Marcie!

It’s been too long since I’ve had a salad, too…I’ve been in Bermuda for 6 days, eating all the fish & chips and drinking all the sweet frilly cocktails, so I’m craving all the greens and this salad looks like sheer perfection! Definitely a beautiful, light fall meal!

I love apple cider vinegar in dressings! Well actually in anything…sometimes a little bit even in a glass of water. This salad is calling my name! I recently had a salad dressing with maple syrup in it and loved it. Combined with the power greens and delicious fruit, I think this needs to go on our menu soon!

Power Green Salad with Pear and Blackberries is a delicious blend of power greens, juicy pears, sweet blackberries, feta cheese and toasted pecans. Toss it in an tangy apple cider vinaigrette for a fall salad that’s full of flavor!

I haven’t shared a salad with you in such a long time that I’ve been going through withdrawals. The last one I shared here was in July! I got sidetracked thinking about comfort foods like lasagna and enchiladas with fall on the horizon, but since salads are a daily staple for me, I love to create new ones to keep things interesting. This Power Green Salad with Pear and Blackberries definitely did that.

I had the idea for this salad over a month ago and have been tinkering with it ever since behind the scenes. Maybe you caught a couple of my stories on Instagram? It was some delicious tinkering, because this salad is full of ingredients that I love.

Originally I tested this salad using spring greens, but when I set out to make it for the third time I realized I only had power greens in the fridge. I used the power greens and I loved the salad even more! I use power greens all the time because my kids will eat them in salads and smoothies like my Power Green Pineapple Smoothie. It’s a delicious blend of baby chard, spinach, and kale, and they’re packed with nutrition. With cold and flu season coming, I figured we need all the help we can get anyway.

The hearty greens are perfectly balanced with sweet juicy pears and blackberries, which are so flavorful right now that I can’t get enough. Pears and blackberries are often overlooked and I have no idea why — fall is about so much more than apples and pumpkin, isn’t it?

Salads like this have to have a salty element and some kind of crunch, which is where the feta cheese and toasted pecans come in. This salad’s got it all!

Except we can’t stop there, because every salad needs a great dressing. This dressing has plenty of tangy apple cider vinegar, dijon, and some maple syrup to give it some sweetness. Maple syrup is my go-to “secret” ingredient in all of my dressings — it gives them such a nice layer of flavor and I have no idea what I ever did before I started using it. The maple syrup also keeps our fall theme going here in case you need an excuse.

This Power Green Salad with Pear and Blackberries is living proof that salads can be interesting, and downright exciting. The colors, the flavors, the textures — it’s all here, and you’re just gonna love it.
