As a busy mom, quick and easy dinners are my jam. I think it's important for active families to have an arsenal of quick dinners at the ready for hectic weeknights. It's important for the health of my family and also for my sanity.
These chicken strips are a favorite of my boys. The cheese, the ranch, the chicken...what's not to love?
I use panko bread crumbs in this recipe because I love how crispy and crunch they make the chicken. If you don't have panko bread crumbs, you can substititue any dry bread crumbs in it's place.
I always have Mexican blend shredded cheese on hand because, well, quesadillas are a staple in our house. But please use whatever cheese you have available for this recipe: cheddar, Monterey Jack, mozzarella - it will all be delicious!
This easy dinner comes togther in a flash and if you want, you can even do a little prep work ahead of time. The eggs can be beaten in advance and the ranch mix, panko, and shredded cheese can be combined in a small bowl. All you need to do when you get home is dip, dredge, bake!
Ingredients
2 lbs chicken tenders or chicken breasts cut into strips
2 eggs, lightly beaten
1/2 cup shredded cheese (I used a Mexican blend)
Instructions
Preheat oven to 375F.
Combine the ranch dressing mix, panko bread crumbs, and shredded cheese in a small bowl.
Dip the chicken in the beaten eggs making sure to let excess drip off.
Dredge chicken in the ranch mixture, pressing gently to make sure coating is adhering to the chicken.
Place chicken on the prepared baking sheet.
Continue dipping and dredging the chicken until all pieces of chicken are coated. Extra coating can be sprinkled on top of the chicken if you like.
Bake for 20 - 30 minutes or until the chicken is crispy on the outside and cooked through. It depends on the size of your strips. Juices should run clear. Internal temperature should be at least 165F. Use a meat thermometer to check if need be.
