I really did like this. The honey seemed a little too prominent so I emailed Gaylenamdndiscussed what else I could use…she suggested sucan so when I make this again I'm going to try that and more spice.


@Tmcleaod, have you tried with sucan nad add more spice.. what more than one teaspoon of cinnammon??


I agree with 3/4 cup of honey is a lot.. could I reduce it to 1/2 cup; what will it do to the bread? Reply

I just made the recipe and doubled it for muffins. It made two dozen….baked for 15 minutes. i also added raisins that I presoaked and some coconut. They're fabulous; I will make them again soon!

Is the zucchini supposed to be drained?


I don’t usually drain it but feel free to do so.

Ingredients


1/3 cup coconut oil


3/4 cup honey


1 egg


1 cup grated zucchini


1 teaspoon vanilla


1/2 cup Greek Yogurt, plain, low-fat


1 1/2 cups white whole wheat flour


1/4 teaspoon salt


1 teaspoon baking soda


1 teaspoon cinnamon


1 cup chopped walnuts or pecans (optional)


Directions


Preheat oven to 325 degrees F.


NOTE: The fats in this recipe are primarily from heart healthy Omega 3's in the nuts. To reduce the saturated fat to 2 grams per slice, simply leave out the nuts.


In a large mixing bowl, cream coconut oil and honey. Add egg, zucchini, yogurt, and vanilla, mix on low until combined.


Combine dry ingredients and add to batter. Mix on medium speed just until combined. Stir in nuts.


Spray a standard size loaf pan with non-stick cooking spray. Pour batter into loaf pan. Bake 50-55 minutes or until a fork inserted in the center of the loaf comes out clean.


Allow to cool 15 minutes in pan before removing and cooling completely on a wire rack.

My spelling and grammar are actually terrible.


I have two computer programs for corrections. But bless them, if the original word is so badly spelled that they can’t even correct it correctly, then what can they do?


Yes, I feel sorry for my two computer programs.


And for my many readers who push through the insanity of reading such badly structured sentences, with commas, where they don’t belong, and the incredibly unhelpful use of unnecessary adjectives.

Yet I still write.


I get weekly feedback about my grammar. And even more difficult to digest, I get (mostly) daily feedback about my theology, my intentions and my pride.


Now, don’t you dare feel sorry for me! If I share my opinions, experiences and thoughts so openly, then it is only fair for those who read to do the same. I appreciate all the feedback, even from the critics (because sometimes they are more right than wrong).


Whether in the comment section of this blog, or my public Facebook, or via private messages on email, you tell me how good or bad the latest article has been.


It’s either, “Bad grammar. Bad Gospel. Bad links.”


Or, “Good challenge. Good preaching. Good stuff.”


I must admit. Occasionally, I properly feel like quitting. And this has happened in all my areas of influence.


One time, a dear friend of mine, and a man I was pastoring for over a year, died of an overdose on the side of the street. I felt like a complete fraud. I not only missed my friend, I felt immense guilt for not doing more.


Another time, I wrote a blog post that offended some important people in my life. They were hurt by my words. They communicated that hurt truthfully and I have not been able to recover those relationships yet.


If you’ve read my article From Full Time Ministry To Full Time Misery, then you know that I have been a crappy husband and father. The journey to healing and restoration has been godly, long and tedious.


But here I stand.


With my ESL grammar, my many theological imperfections and a heart that needs the “sinners prayer” every 40 minutes (give or take).


However, I won’t stop writing.


I won’t stop preaching the good news.


I won’t stop fighting for my wife and children.


You see, the very thing that could be stopping me, is not.


I’m deeply tempted to let it … but, “Let the weakling say, “I am strong!” (Joel 3:10)


We all have legitimate hindrances. Things that need to be addressed and corrected. There is still room for improvement and self-awareness. But if we are waiting to be perfect in order to achieve anything in life, then we would never achieve anything.


You Know Why The Thing That Is Stopping You, Shouldn’t Be Stopping You?


Because there is always a reason to quit, to wait, to hold back, to not trust God.


You might not have the right diploma, or the talent, or the money… but God wants to inspire faith and forward movement in the face of lack and brokenness.


He is not looking for ability, he is always looking for availability.


It might be time to fearlessly be yourself. To radically accept who you were created to be. And properly embrace your best and worst.


Trust me, you’re in the ideal season to use both sides of your story in the service of others (even while you’re still learning and growing and adjusting).


Mistakes are proof that you are trying. Your weakness is a statement of God’s strength. And you can find a way forward while eliminating the excuses that push you backwards.


We are not perfect you and me; not even close. Nonetheless, we are here, in this time and space of life. And God has trusted us with a sound and a story. This generation longs for us to sing and preach and love and write.


For the creation waits in eager expectation for the children of God to be revealed. Romans 8:19


Admit this to yourself: I am loved by God and I have something great to offer to the world.


Recognize that fear of failure has stopped more people than failure itself. Don’t be part of that story! Go ahead and do what scares you until it doesn’t. Do what’s hard until it’s easy. Do what you’ve been called to… and stop, stopping.

Seems that something is missing in the recipe. The cauliflower does not become tender after 50 minutes. Should we add water in the casserole before we put it in the oven?


It's an hour and a half bake time. One hour covered, 20 minutes uncovered, then another 10 after you add the tomatoes, etc.


that means the time stated at the begining of 1H 15m should be changed


How to replace sherry in the recipe?


Maybe try a stock of some sort, or just water would do. I would do that instead

Does the casserole go into the oven covered or uncovered?

This was amazing! We loved it. I want to try adding two tins of tomatoes and serving over pasta or rice. The flavor was outstanding and it was tender and quite lovely. Thanks Jamie!!


This took quite a while, but was so worth it! I replaced the 4 tablespoons sherry by 2 tbsp. water and 2 tbsp. apple cider vinegar and this worked perfectly. The BF and I absolutely loved it.

I boiled the whole cauliflower first for 30 minutes then carried on as per recipe. No problems!

In case you are not convinced tomatoes and cauli are made for each other, I whizzed some goats cheese in veggie broth and poured it over the cauli after 1 hour ( my rub was olive oil, tuscan herb mix, salt and lemon). Absolutely fantastic. It took about 1 hour covered, plus 30 minutes uncovered, plus 10 minutes resting. I think I will never boil a cauliflower ever again. next, I'll try the same with a romanesco.


I made this cauliflower yesterday and it was harsh/tough. I think you need to add some water and cover it otherwise it wont get tender. The juice of the lemon and the cherry is insuffcient.


Hi Tobias, apologies this recipe wasn't a success. It has since been back to our food team for testing and we have changed the recipe slightly. We reckon it's pretty perfect now (tender and super delicious) Would love it if you gave the new and improved version a go and let us know what you think?

do the tomatoes get poured over the cauliflower or just into the dish?


What's the purpose of the cutting a cross into the base? And what if I wanted to make this without the tomatoes? Also, can I use apple cider vinegar instead of dry sherry? Replies will be appreciated greatly.


The cross cut into the base allows the heat to get into the base so that it cooks more evenly. You can leave out the tomatoes but won't get the same results. You will need to replace the liquid of the tomatoes. Also, someone above already say that they used apple cider vinegar instead of sherry and had great success.


I made this with a sweeter sherry (to round out the sharpness of so much thyme) and used more than prescribed; the extra liquid helps the cauliflower soften properly. There were only two of us so plenty left today which I chopped into florets and tossed in a pot with a watties five bean mix - delicious! Nice to get two meals out of this because there was rather a lot of prep.

Hi! This looks great, but I have a question. In the description you say it calls for white cheddar cheese and the ingredient list states white American cheese. Which is it? I prefer cheddar since it’s not as processed as American, but hey, cheesy goodness is hard to beat either way. Just wondering which is correct.

This recipe was a complete fail. Rather then a dip it was a thick curdled mess. I was so embarrassed to go to a bbq empty handed because this dip did not work out. I also think the measurements are way off. Far too much spinach and canned tomatoes. Sorry but I would not recommend this recipe.

Well, I made this for Super Bowl today and although it tastes very good, the consistency of the dip suffers. It’s very “grainy” tasting. Even though I added a small amount of white Velveetta, I think the use of CHEDDAR cheese is the cause of the graininess.


Next time, I think I will use white American cheese, which is much easier to find in my local supermarket. I think it will make it a creamier consistency.


All in all very tasty, but not the mouth feel I was expecting.


I could not get the milk and cheeses to come together. The cheeses melted and stayed gooey while the milk just slushed around the side of the pan. I’m going to try and bake it to see if that will help before serving.


I tried this today, it was looking great but then I added the spinach and Rotel! It turned to a watery mess with a glob of melted cheese. I was so disappointed.


Great recipe, though needs flour to bind the milk and cheese so its not a cheese glob. I sprinkled some flour on the final product to fix. Delicious recipe.

We had a little get together this past weekend and I knew that it had to be made. This dip comes together easily. White cheddar and pepper jack cheese, jalapeños, diced tomatoes, and spinach all come together in this flavorful and cheesy dip. Before you know it, it is melted and ready for you to dip your chip into.


This is the best dip that you will make. I just couldn’t get enough of it. One chip turned into two and two turned into a million. I seriously could have eaten this entire dip myself! This is a must make dip and perfect for the upcoming football season. You are going to love it!

1 Tablespoon olive oil


½ cup white onion, diced


1 jalapeno, seeded and diced


12 ounces white american cheese, cubed or shredded


4 ounces pepper jack cheese, shredded


⅔ cup half and half (milk will also work)


1 (15-ounce) can diced tomatoes with green chiles, drained (also known as ROTEL)


2 cups fresh spinach, chopped


½ cup fresh cilantro, chopped


In a large skillet, heat the oil over medium heat. Add the onion and jalapeño and salute until tender. Add the cheese and half and half and continue stirring until melted.


Add the canned tomatoes, spinach and cilantro and stir well. Transfer to a serving dish and serve with tortilla chips.

do you have to be concerned about the alcohol content in these for children at the wedding?


As a professional baker, I can say that 3-4 Tablespoons of alcohol in that amount of confectionery icing is marginal at best. It comes out to 1-2 ml of alcohol per serving. You should be fine to have these on a table at an event where children are present.


No, it was my wedding she made them for and the frosting was delicious and there was not enough alcohol to hurt anyone. This was a fabulous cake and cupcakes for everyone to enjoy and still talk about today.


Can’t wait to make these for a friend’s birthday! I was just wondering how well they stored? I would need to travel with them. Should they be kept in the fridge? Does the filling make them soggy after a while?

They don’t usually last long when I make them, but they should hold up fine for a couple of days. They’re a very popular recipe here on the blog and a few (including myself) have made this recipe for a wedding cake a couple of days ahead and it help up fine. The buttercream crusts up nicely, not hard, but firm enough to hold shape during travel. If you use the Easy Raspberry Filling in the recipe then I know it would hold for at least 2-3 days. It would be best to keep them chilled and remove a few hours before serving if you’re making them ahead of time. Enjoy!


I replaced the milk in the cake ingredients, with equal parts extra dry (semi-sweet) champagne and the cupcakes turned out great! The taste of champagne in the cake is subtle, but good. These are gonna be so fun to serve to my guests on New Year’s Eve. Thanks for the recipe.

Yes, Brittany! It makes the cupcakes super moist! I hardly ever make cakes without sour cream or yogurt!


What about the alcohol in the champagne for someone who doesn’t do much with alchohol


Hi Dorothy, unless you heat the champagne to the point of flames to burn off the alcohol, you’d best use a basic buttercream without it if it’s a concern.

It’s entirely up to you, but honestly, it’s the frosting recipe that makes these cupcakes because the champagne buttercream has such a lovely flavor. I would worry that the cream cheese would be far too rich, but you can alter the recipe to make it your own. Buttercream frosting is pretty stiff and this one crusts up nicely.

You can replace the champagne with heavy cream for a classic buttercream.

Made the black tuxedo cupcakes today. I also made the raspberry, white chocolate cupcakes. Because I could not use the frosting with the champagne in it, I used the frosting from the tuxedo with the white chocolate pudding mix in it. It seems to be soft, but nice. Will the frosting crust? Does it need to be refrigerated?


Hey Sue! While the white chocolate frosting is absolutely delicious, it’s a whipped cream base and will not crust like a traditional buttercream. It should be served the same day for best results, otherwise, keep it chilled.


These cupcakes look amazing! I plan on making these for a friend’s bridal shower but wanted to do a test run first. Does the champagne still need to be bubbly to make a good frosting? I was hoping to avoid buying/wasting another bottle just for another frosting batch next week.

You should be fine to use the same champagne, it doesn’t need to be bubbly. I recommend using one of the small individual serving bottles if you can find it, they usually come in a 4 pack and mean less waste. Unless you’re going to drink the rest of the bottle of course I make this recipe for a lot of weddings and it’s always a hit! Enjoy!

Can I substitute jam for the raspberry filling?


You could, though I would recommend getting a canned raspberry pie filling if you can, the texture will be closer. But jam will do just fine if that’s what you have.

I’ve used this recipe to make a couple of wedding cakes and everyone loved it! I would say you’re going to need to double the recipe and evenly divide between the pans, cooking the cakes two at a time. Make sure tot let them cool completely. I used the raspberry filling as the filling between the layers and then did a crumb coat of frosting and let it chill for about a half hour before applying the final coat. Keep in mind that 4 8-inch layers will yield a heavy little cake, so you might want to keep that in mind if you have to transport it. If you are transporting, I recommend putting in a cake rod which can be found at most craft stores in the baking section. An alternative that I haven’t tried would be to make just one batch and bake them in the 2 8-inch pans and slice those two cakes in half for thinner layers, I haven’t tried it with the recipe though. I hope that answers your questions!

So 1 batch of this recipe would make 2 8-inch cakes? How long would they need to be baked for do you think?


My guess is they will need to bake between 35 and 50 minutes. Once a toothpick comes clean they’re done. Don’t open the over before 30 minutes.


These are so great! I am making them for a Bachelorette Party and did a test batch this weekend. The flavor of the cupcake is addicting and the only thing I think I will change is making a raspberry filling that is slightly more tart (just personal preference). Thanks for the wonderful recipe!!

Hi Amanda, it does not need to chill, but I would let it cool a bit closet to room temp so you reduce any risk of melting the buttercream.

Fluffy cake with a hint of white chocolate, homemade raspberry filling, and an amazing champagne buttercream.


Yup, you’re done for.


I chose to use Barefoot Bubbly Pink Moscato Champagne because of the hints of candied cherries. I thought it would pair nicely with the raspberries, and boy was I right. I think champagne buttercream is my new favorite, I love the depth of flavor, yet its still light and silky. These were a hit at our New Year’s Eve party last night and a few guests even took them home for breakfast.Okay, I admit it, I might have had one for breakfast too, they were just too good!


Happy 2014 everyone! It’s going to be a great year and I can’t wait to share it with all of you!


1 Box Betty Crocker White Cake Mix


1- 3.4 oz. package White Chocolate Instant Pudding


4 Egg Whites


1 cup Sour Cream


1 cup Vegetable Oil


1/2 cup Milk


1 tsp Vanilla Extract


1/4 tsp Sea Salt


1 cup (2 sticks) Unsalted Butter


4 - 5 cups Confectioners' Sugar


3 tbsp Barefoot Bubbly Pink Moscato Champagne


Line cupcake pan with liners.


Beat all ingredients together until smooth.


Fill liners about 2/3 full of batter.


Turn oven down to 325 F.


Bake cupcakes for 18 - 20 minutes.


Test with a toothpick to check that they are done, transfer cupcakes to a cooling rack.


Cream butter.


Add confectioner's sugar a 1/2 cup at a time.


Beat on high for about 3 minutes, frosting should be fluffy and smooth.


Add champagne and beat for 2 more minutes.


Frost cupcakes.


Update: This post is the most popular post on Living Better Together and in my real life. I’ve made a wedding cake with this recipe that everyone loved and I’ve made the cupcakes several times over. The champagne buttercream is absolutely amazing. I love the gorgeous pearl sheen it gives the frosting making it perfect for any special occasion! Not to mention the flavor! One of my favorite things about this frosting is that you know it’s ready based on the flavor… once you have enough champagne in the buttercream it has a fruity flavor that just sings! One second it’s sugary and the next it’s fruity in a sophisticated and decadent way! I hope you all enjoy this recipe as much as those who have checked it out and pinned it before you!

We tried this tonight. It was a big hit! One kid said too much garlic, so I might try 2 cloves (I may have done a bit more than three as I tend to be rather generous with garlic – oops!) I also couldn’t find hard fontina cheese, so I subbed Monterey Jack and it worked well! Of course, fontina would probably be better, but this was definitely a doable substitute!

After going-going-going for our first two weeks in Austin, I must say that this past weekend was a lesson in R&R.


We slept in — like, legitimately sleep in — each morning. We ate tacos, tacos, and more tacos for lunch. We soaked up the warm Texas sunshine and went on some long walks exploring in the afternoons. We sipped frozen happy hour margaritas on patios as the sun went down in the early evenings. We stayed up spending time with new and old friends and some family members passing through town until late at night. And we took it all wonderfully — and deliciously — slow. No rushing, no hurrying, no packed calendars. Just nice and slow, like the charming Southern drawls we keep hearing everywhere.


Which, of course, made me realize for the 1000th time how quickly I still tend to move through life. I feel like I have slowed down significantly over the past few years, choosing to more time with people I love and lesson work, and trying to make that quality time without being distracted by alerts on my phone or looming plans ahead. But even still, I can’t help but always notice that my default is to rush, in the hopes of squeezing as many good things as possible into a day.


That’s the beauty of being in a brand new place, though, where everything is new and we don’t know our way around and our calendars are wi-hi-hide open. (And notably, where we have an entire month to explore, versus trying to cram everything into a few days.) We have been able to take our time — quite literally — with everything. And goodness, has it felt refreshing. I apparently needed it. And I’m loving it. And I’m trying to let myself get very, very used to it. :)


I’m happy to say that we’ve also been taking things at a slower space in our little Texas kitchen. I’m usually the queen of efficiency when buzzing right and left around my kitchen at home in Kansas City. But trying to navigate our way around a new kitchen has definitely slowed me down, not to mention the constant elbow-bumping and cute-dog-distracting that comes with sharing a kitchen with Cookie & Kate. I wouldn’t change a single (slow) minute, though. It has been so much fun.


And frankly, when it comes to Italian comfort food like this creamy stovetop Gnocchi Mac and Cheese, I want to soak up every second.


I know that we’re not officially in the “deep” South right now. But hey, Texas may be as close as I come for awhile. So as a little nod to Southern comfort food while we’re down here, I thought it was high time I post a new recipe for mac and cheese.


Well, minus the mac.


My favorite gnocchi from DeLallo get to play the starring role in this rich, classic, creamy stovetop version of mac and cheese! Which means that this dish will have minimal gluten if you use my favorite mini potato gnocchi. (Or which can be 100% gluten-free if you use DeLallo’s gluten-free gnocchi.) And which also means that you get to enjoy those little heavenly pillows of chewy gnocchi deliciousness with each bite. (Sorry, I don’t know why I always think of gnocchi as “heavenly pillows”…but they are.)


You can definitely make homemade gnocchi for this recipe if you insist. But I took the shortcut of using DeLallo’s delicious pre-packaged gnocchi for this recipe. I always keep a few boxes on hand in my pantry (even here in Austin!) because they only take a few minutes to boil and are perfect for last-minute dishes.


If you’ve never cooked gnocchi before, trust me, you’re going to love ’em. Just bring a big pot of salted water to a boil (as you would for pasta). Then add the gnocchi and wait until they rise to the surface, for about 4-ish minutes. Once they have floated to the top, just strain out the water and you’re ready to go!


While you’re waiting for your pasta water to come to a boil, let’s get started on that cheesy sauce.


I went with the classic trifecta of cheeses for mac and cheese with this recipe — sharp cheddar, fontina and Parmesan. They are the ultimate in rich, creamy, cheesy perfection. But in order for each of them to melt the smoothest, I recommend buying the cheese in blocks and then grating it yourself just before adding it to the sauce.


Once they are all grated, whisk them up with some milk, veggie (or chicken) broth, cornstarch (as a gluten-free thickener), garlic, and some salt and pepper to make your sauce.


Then once your gnocchi are cooked and ready to go, toss them with the sauce. And the result? Well, I think you can see for yourself.


Perfectly creamy, perfectly cheesy, perfectly gnocchi-y. Basically just perfect, if you ask me.


I usually prefer my mac and cheese fresh off the stovetop. But if you prefer the dish baked, you can pop it in the oven sprinkled with some Italian breadcrumbs to get a nice crispy crust at this point.


Otherwise, I recommend just serving it plain off the stovetop…


…maybe sprinkled with some fresh parsley or basil, or maybe even topped with an extra pinch of Parmesan if you’re feeling indulgent.


Like I said, this meal is comfort food through and through. But I promise you, it’s worth every delicious bite. And even better when enjoyed nice and slowly. Enjoy!

Gnocchi Mac and Cheese


This Gnocchi Mac and Cheese recipe is rich, creamy, classic, and oh-so-comforting and delicious.


Prep Time: 15 mins


Cook Time: 20 mins


Total Time: 35 mins


Ingredients:


3 tablespoons cornstarch


1 cup vegetable or chicken stock


3 cloves garlic, minced


1 cup milk, warmed


1 1/4 cups freshly-grated fontina cheese


1 cup freshly-grated sharp cheddar cheese


1/2 cup freshly-grated Parmesan cheese


1/2 teaspoon salt, or more to taste


1/4 teaspoon finely-ground black pepper, or more to taste


(optional toppings: finely-chopped fresh parsley or basil, extra Parmesan cheese)


Directions:


Cook the gnocchi in a large stockpot of boiling water, according to package instructions. Drain and set aside.


Meanwhile, as you are waiting for the water to come to a boil and for the gnocchi to cook, make your cheese sauce. Begin by whisking the cornstarch and the vegetable/chicken stock together in a small bowl until the cornstarch is completely dissolved. Set aside. (Be sure that the stock is room temperature or cooler, otherwise the cornstarch will not dissolve.)


Heat butter or olive oil in a (separate) large saucepan or saute pan over medium heat. Add garlic and saute for 1-2 minutes, stirring occasionally, until fragrant. Stir in the cornstarch mixture, and whisk until combined. Add in the milk, and whisk until combined. Continue cooking, whisking constantly, until the mixture reaches a low boil. Then remove from heat, and stir in the cheeses until they are melted and smooth. Season the sauce with salt and pepper, to taste.


Combine the cooked gnocchi and cheese sauce in the large stockpot, and toss together until the gnocchi are evenly coated. Serve immediately, topped with optional toppings if desired.

If you've ever visited a place that begins with Olive and ends with Garden, you may have come across this soup. It's well-loved by fans of the Italian chain, which means that copycat recipes are all over the internet. This take on the soup, however, is a little different. It relies on rotisserie chicken to make it weeknight-friendly, but skips the heavy cream that's found in the restaurant version to lighten it up. Don't fret, though — it's still full of creamy comfort, thanks to tender, starchy potato gnocchi.


Chicken and Dumplings, Italian-Style


This is the kind of soup that puts you at ease — think of it as an Italian version of the Southern comfort food classic, chicken and dumplings, with fresh potato gnocchi replacing the usual flour dumplings. What makes this soup particularly special, however, is how it utilizes rotisserie chicken. Not only is the meat tossed in, but the carcass is also simmered in the pot with a simple soffritto of diced onion, carrot, and celery along with plenty of garlic, herbs, and water to make a quick chicken stock. And since the gnocchi are cooked right in the pot, they release some of their starch, thickening and adding creaminess to the soup, eliminating the need for any actual cream — not that you couldn't tip in a bit for a final flourish!


Weeknight Rotisserie Chicken and Gnocchi Soup


2 tablespoons olive oil


1 large onion, diced


4 medium carrots, peeled and cut into 1/4-inch-thick rounds


3 celery stalks, diced


Kosher salt


Freshly ground black pepper


4 cloves garlic, minced


6 cups water


1 bay leaf


2 sprigs fresh parsley


1 (2-pound) plain rotisserie chicken, meat shredded (about 4 1/2 cups) and carcass reserved


1 pound fresh potato gnocchi


1 (5-ounce) bag baby spinach


Heat the oil in a large Dutch oven over medium-high heat until shimmering. Add the onion, carrots, and celery, season with salt and pepper, and sauté until softened, about 5 minutes. Add the garlic and sauté until fragrant, about 1 minute more.


Add the water, bay leaf, parsley, and chicken carcass. Bring to a boil, then reduce the heat to maintain a simmer. Place the lid on the pot so it is slightly ajar; simmer for 30 minutes.


Remove and discard the chicken carcass, bay leaf, and parsley. Add the shredded chicken and gnocchi. Continue to simmer until the gnocchi is al dente, about 3 minutes, or according to package instructions.


Add the spinach and cook until wilted, 1 to 2 minutes. Season the soup with salt and pepper as needed.

I am a sucker for watermelon, I can never resist them. And I would always pick the biggest one (which is bigger than my head), lug it home, and then realize that the watermelon is too big for my fridge and I couldn’t fit it in. That was exactly what happened this past weekend.


With a bottle of tequila sitting on my kitchen counter top, plus some fresh mints in my backyard, I turned my watermelon into this amazing watermelon-tequila cocktail, thanks to the amazing recipe by Food & Wine. I opted out the blueberries from the recipe and added a bit of calamansi lime juice to the cocktail. It was amazing and in no time, Mr. Rasa Malaysia and I finished the whole jug of the cocktail, at 11 am in the morning!


With Memorial Day weekend just days away, this watermelon-tequila cocktail is the perfect drink for your party, and definitely all through summer. You can easily make it into a mocktail by opting out tequila in the recipe. It’s a perfect cocktail for any parties and a summer drink to quench your thirst and beat the heat.

Hi Lil Luna friends! It’s Kimberly from A Night Owl, and a Lil Luna Crafts Contributor this year. I’m so excited to be here sharing with you today while Kristyn is off enjoying her little one. Since it’s not my normal contributor post, I decided to mix it up for you with a yummy recipe!


It’s Summertime! And you know what that means? Time to break out the lemonade and popsicles! Do you love popsicles? I’ve always been a big fan and I find that my little guys love them too! But I’m not always a huge fan of what you buy in the stores and sometimes I think you just want to control what (maybe how much sugar?) goes into what your little ones eat. So why not make homemade? And that’s just what I did.


Coke Float Popsicles. Yum! Are you a root beer float fan? Yes they are delicious, but I have to admit, I’ve always enjoyed a Coke float more than root beer! So last month when I was doing my Pinterest “research” and I came up with this list of 50 amazing popsicle recipes, one of the most delicious sounding ones to me was the root beer float. So I made my own version of Coke Float Popsicles. And they are delish! And I’m sharing the easy recipe with you today.


Don’t they sound delicious? Well they are! You’ll have to give them a try this Summer when you’re trying to cool off. And feel free to substitute root beer for the coke if that’s more your taste! I hope you enjoy this recipe and that you’ll stop by A Night Owl sometime and say hello!

hab das rezept nachgebacken, aber irgendwie haben die kekse gar nicht geschmeckt.. und die konsistenz war nach dem abkühlen wie gummi. schade eigentlich, hätte lecker geklungen..

Vielen Dank für das Rezept! Die Kekse sind sehr lecker! Wichtig aber ist, dass die Banane reif und süß genug ist. Dann schmecken die Kekse toll! Dazu sind sie noch sehr gesund(ohne Zucker und Fett). Tipp! Statt Banane kann man Erbeeren oder Kiwi hinzufügen.


Habe die Kekse nachgebacken und das ging sehr gut und schnell.Als sie aus dem Ofen kamen roch es lecker,süß doch leider hatte es ihnen dann enorm an Süße gefehlt,habe dann einfach etwas Schokoglasur raufgetan und es war dann süß genug.Werde sie das nächste mal mit etwas Zucker machen.

danke für das Rezept! Perfekt für meine Zwecke: schnell und einfach gemacht, mit leicht erhältlichen Zutaten und leicht noch dazu und schmecken tun sie auch.


Nachdem ich die Kommentare gelesen hatte, habe ich noch eine kleine Handvoll Rosinen mit reingeworfen, aber ich muß auch sagen: wenn ich Kekse ohne Fett (als Geschmacksträger) und Zucker (für die Süße) backen will, muß ich eben akzeptieren, daß die Plätzchen dann nicht sooo intensiv schmecken! Und für meine Begriffe muß das ja auch nicht sein. Die meisten Kleingebäcke sind eh zu süß.


Ansonsten besteht ja auch immer noch die Möglichkeit, mit Gewürzen und z.B. Trockenfrüchten zu experimentieren. Jedenfalls als Grundrezept super, viele Dank dafür!

sehr ausbaufähig... Die kekse waren einfach nur gummig und haben nur nach haferflocken geschmeckt...


Prima geeignet für Kleinkinder! Ich habe noch gemahlene Mandeln und Kokosraspel untergemischt, so fanden Erwachsene sie auch ganz lecker!


Ich habe auch etwa ein viertel der Haferflocken durch Sonnenblumenkerne ersetzt und zwei Teelöffel Trinkkakaopulver hinzugefügt. Nach etwa 25 min im Ofen waren die Kekse ganz in Ordnung, von der Banane habe ich allerdings nicht mehr wirklich etwas geschmeckt.


Die Kekse sind super. Ich mag es eigentlich süss, aber das hier ist eine gesündere Alternative. Und es sei betont, dass sich der Geschmackssinn auch an einen Keks ohne Zucker gewöhnt ;) Allerdings nehme ich mindestens 2 Bananen (überreif!!) und mache Cranberrys dazu. Etwas Mandeln und Kokosflocken kommen auch nicht schlecht.


hab zwei Bananen und nur zwei Eier verwendet, ich persönlich finde die Kekse lecker, man darf aber kein süßer Esser sein ;)

Zubereitung


Arbeitszeit: ca. 10 Min. / Schwierigkeitsgrad: simpel / Kalorien p. P.: keine Angabe


Die Eiweiße zu Eischnee schlagen. Die Eigelbe mit der zerdrückten Banane so lange verrühren, bis ein schöner, schaumiger Teig entsteht. Das Backpulver hinzufügen. Den Eischnee unterrühren, danach die Haferflocken unterheben.


Den Teig in einen Spritzbeutel füllen, fingerdick aufs Backblech aufspritzen (ca. 21 Plätzchen pro Blech) und bei 180°C Ober-/Unterhitze ca. 20 Minuten backen.


Je kürzer sie gebacken werden, desto weicher werden die Kekse. Wer sie ganz weich mag, lässt sie bis zu 10 Minuten im Ofen, wer sie ganz knusprig mag, der lässt sie bis zu 30 Min. drin

I've copied off several of your recipes, but haven't cooked too many, yet. I just haven't done much cooking lately.


My only complaint is too much editorial in the recipe. I like to print them and put them on recipe cards and with all the comment it doesn't fit on one.


I also think that this is a benefit to many others--especially if they don't cook very much--so you probably should keep up with the editorial. I'll just trim and paste mine!!


I do absolutely love your sight--it is awesome. I love the red mixed in too--it adds to the interest for me when I'm reading the recipes.

I copy the ingredients and instructions. I create a new google doc and save them in my google drive. I have subfolders for seasoning blends, chicken, beef, pork, fish, vegetarian, side dishes, etc.


Easy to access on my phone, tablet, laptop, or if I want to print them out, it comes out in a nice friendly format without a lot of unneeded info.

Barbie2be, you could make this with fish and I bet it would taste great, but reduce the marinating time to 1-2 hours. Any longer than that and the lemon juice in the marinade will start to \"cook\" the fish. Let me know if you try it.

I buy Greek seasoning online from Penzeys or The Spice House. The bottle I have right now doesn't list the ingredients, but I think it's mainly dried lemon, garlic, and oregano with a little salt. You could add any of those ingredients and it would probably turn out fine. You might also try googling, there could be a recipe out there for it.

Donna, right now I have Greek Seasoning from The Spice House, but also get it from Penzeys. The Spice House bottle doesn't list the ingredients but I think it's mostly garlic, dried lemon, dried oregano and salt. I've also used Cavender's Greek seasoning which you can buy at most grocery stores.


Chicken looks great, but the salad in the picture looks yummy too and I can't tell if it's one of your recipes as I'm not able to match to other pics... help a girl out and let us know what the salad is as well! thanks.

If you look in the comments above I have talked about the brand I use and also the ingredients.


I buy the Penzeys or Spice House Greek seasoning online, but you can get Greek Seasoning at any large grocery store.


I've been using Penzeys Greek seasoning for awhile & I love it but I looked up the Cavenders since you mention it. They don't list all the ingredients and msg is a top ingredient so I don't want to use it. Is it so good that it's worth using to you? Btw, yours is my favorite cooking and recipe site. thanks so much, sandy


Sandy, you may be interested in this piece I wrote for BlogHer about the safety of MSG. Most experts feel it is safe, and I'm personally not sensitive to it, so that's not an issue for me.


Of course, it's a personal opinion, so if you don't want to use MSG, just stick with the Penzeys brand.


Could you put the marinade in a bag with frozen chicken breasts, then return to the freezer to use later? I assume defrosting the chicken this way might result in diluted marinade from the excess water in frozen chicken, but thought I would ask!


BlossomKidsChicago, I haven't ever tried doing that, so I can't say for sure. But my first reaction would be that the marinade ingredients would separate when they freeze (like how the oil will solidify on the top in the fridge) and I think you're right that it would be watery when it thaws. I don't think I would do it that way.


I was wondering if baking this versus grilling it will make that big of a difference or not?


I've never tried baking this, and I think you would lose out on the charred flavor that makes grilling so good. If you don't have a grill, I'd recommend marinating, then pan fry until the outside is nicely browned and finish by roasting in a hot oven for 10 minutes or so to cook the inside.

Question, I did this and left it in the fridge while I was at work 7 hours, came home and the virgin olive oil looked like it harden up some, it wasn't complete liquid like then I put it in. Is that normal?


The olive oil will thicken when it's cooled, but it doesn't impact the results at all. Let it come to room temperature in the bag when you're ready to cook.

(For Friday Flashbacks I feature recipes that have been my personal favorites, and for Labor Day weekend I thought it would be fun to spotlight this Very Greek Grilled Chicken, which is the all-time most popular grilling recipe on Kalyn's Kitchen! And this blog has quite a few grilling recipes, so that's saying something. If you haven't tried this recipe yet, I hope it might be a good option for your weekend menu.)


I made this Very Greek Grilled Chicken for some very thoughtful people in my family back in 2010, and when I went to the blog to print out the recipe, I decided it was overdue for new photos! I came up with this grilled chicken with Greek flavors in in the very early days of my blog when I was experimenting to see what type of marinade would taste good on grilled chicken, and I've made it many, many times since then. Leftover grilled chicken is something I love to have in the fridge to throw on top of a salad or eat in a sandwich, so even if you're only cooking for a few people, I recommend making some extra.


If you're not that experienced with grilling chicken breasts, you might want to read my how-to post with 5 Easy Steps for Juicy Grilled Chicken Breasts. And if it's not quite grilling weather where you live, you can also cook this chicken in a stove-top grill pan with ridges or a George Foreman Grill with good results.

Start by trimming all visible fat and tendons from the chicken breasts. (I save all those scraps and use to make homemade chicken stock.Make crosswise slits (not too deep) down the length of each chicken breast. This helps the marinade to penetrate better and ensures that the thicker pieces of chicken cook more evenly.


If you have a fresh lemon, using lemon zest in this marinade really perks up the flavor, but it can definitely be made without it. Whisk together the marinade ingredients. I love to use Ziploc bags to marinate things, but you can also use a glass casserole dish if you'll be home to turn the chicken a few times. Let chicken marinate for 6-8 hours if you can. Grill chicken over medium-high heat and serve hot.


Very Greek Grilled Chicken


(Makes 6-8 servings, recipe created by Kalyn with memories of Greece in mind.)


Ingredients:


6-8 boneless, skinless chicken breasts


Marinade Ingredients:


1/2 cup extra virgin olive oil


1/3 cup fresh-squeezed lemon juice


1 tsp. fresh lemon zest or 1/4 tsp. dried lemon zest (or use a little more lemon juice if you don't have lemon zest)


1 tsp. Greek Seasoning


1 tsp. poultry seasoning


1 tsp. dried oregano


black pepper to taste


Instructions:


(If you're not that experienced grilling chicken, you might want to read 5 Easy Steps for Juicy Grilled Chicken Breasts before you make this.)


Trim all visible fat and membranes from chicken breasts, I like to make small crosswise slits about 1/2 inch apart down the length of each chicken breast to help the marinade penetrate the meat. Put chicken in single layer in Ziploc bag.


Combine marinade ingredients and pour over chicken. Marinate in refrigerator 6-8 hours or all day if desired. (If you don't have that long to marinate I recommend increasing the lemon juice a little.) When you're ready to cook, take chicken out of the marinade and let it come to room temperature if you have time.


To cook, spray the grill with non-stick spray or oil; then preheat to medium hot (you can only hold your hand there a few seconds at that heat.) Put chicken on grill top side down on the diagonal and cook about 4 minutes (or until you see grill marks when you lift up the edge.) Rotate chicken pieces so they're going on the diagonal the other way and cook about 4 minutes more (until you see criss-cross grill marks.)


Turn chicken over and cook about 4-8 minutes on the other side, until chicken feels firm but not hard to the touch when you press on it with your fingers. (Actual cooking time will vary depending on chicken temperature and how hot your grill is. You can also test the doneness with an Instant-Read Meat Thermometer).

Even if you're only cooking for a few people I recommend making the whole recipe. The leftover chicken is great to cut up on top of a salad, or mixed into some stir-fried veggies for a quick lunch.


South Beach/Low-Carb Suggestions:


Grilled chicken like this is great for any phase of the South Beach Diet, or any type of Low-Carb eating plan, including Paleo. For a low-carb meal, serve with something like Slow Roasted Asparagus, Many Peppers Greek Salad, or Grilled Zucchini, which could cook right along side the chicken on the grill.
