One Pot Beef Stroganoff

One Pot Beef Stroganoff – all the flavors of beef stroganoff in a quick and easy dinner. Much more budget friendly than the original!

Do you have any favorite dinners from when you were a kid? You try and try to recreate them, or follow the recipe, but they are never what you remember. Mom’s cooking has a way of doing that! Beef Stroganoff is one for me. I have tried a million ways, but it is never the same as she made when I was growing up.

Unfortunately my family is not a fan of mushrooms, so they don’t appreciate all of my attempts. I made this Skillet Beef Stroganoff that was actually a hit here. They picked around the mushrooms, but really liked it! So I pressed my luck again…

You know I like one pot meals, I have a TON of them on the blog already. So you had to see this one coming, right? One Pot Beef Stroganoff. All the flavors of the traditional beef stroganoff. But in something that you can make any night of the week. It is super quick and easy, and cheap to make.

I used ground beef instead of a pricier cut of meat. You still get the creamy rich sauce, so you aren’t missing out on the flavor! One Pot Beef Stroganoff will surely become a family favorite. Even the leftovers are great for lunch the next day. When my mom made stroganoff growing up, she always used white button mushrooms. But I like to use the little baby bella mushrooms, because they have a little richer, deeper flavor.

I think that helps when you are using ground beef, ups the flavor, so you aren’t missing the steak. But you can use whatever you have or whatever is on sale this week. Just add this to your menu, and you will thank me. A 20 minute dinner is always a good thing!
