Wonderful recipe! The sour cream was a bit off-putting. Really, it just looked bad, but I couldn't taste it much. So if anybody isn't a fan of sour cream (like me!), no worries, it should be fine :) I really disliked how curdled it looked, but it's just a look. It still tastes amazing! Even my four year old loved it and she is picky! The only change I made was that I added some jalapenos for a bit of spice on one side of the casserole. That way the others in my family who can't handle the spicy stuff could enjoy it too!

For some reason my sour cream dried up. Good flavor, but an odd texture.


YES I DO . I HAVE SEEN THIS RECIPE DONE SEVERAL DIFFERENT WAYS AND I DO NOT THINK IT MATTERS . I HAVE EVEN SEEN IT DONE WITH CUBED FROZEN HASH BROWNS AND ALL THE INGREDIANTS MIXED . THIS WAY YOU CAN MAKE IT THE DAY BEFORE AND REFRIDGERATE IT . TAKE IT OUT THE FOLLOWING DAY EARY AND LET IT COME TO ROOM TEMP AND THEN BAKE TO GO WITH YOUR MEAL .IT ALSO WORKS GREAT AS A DISH FOR A BRUNCH .


I am going to say this,the recipe is really delicious.My family and friends loved it.Too easy to make,I had heard of it but never tried it.Thanks for the recipe for Twiced Baked Potato Casserole.


I baked my potatoes ahead of time, and will be making this tonight. However, my potatoes came out a little softer than I would have liked..They aren't all exactly in cubes. Do you think that is still okay?

Twice Baked Potato Casserole Recipe

Been making a similar recipe for years but with a few alterations. To cut the prep time down i wash and prick 3-4 unpeeled large size (5-6 inch) baking potatoes a few times with a fork then cook them in the microwave on high for about 5-7 minutes, turning them over half way through. Then preheat your oven to 350* F or 175* C.


Wait until the potatoes have cooled a bit then carefully cut them in half and scoop most of the potato into a medium mixing bowl while reserving a thin amount in the skin to keep their shape. These will be baked later. Next I rough mash the potato. Then I mix in 3 tbsp of butter, 1 c. of sour cream, 2-3 tbsp dried chives (or spring onion if pref.), 2 c. of shredded four cheese blend (or any combo you like), salt and pepper to taste. Bake this mixture in an appropriate sized baking pan, that has been lightly greased or sprayed, for about 20 min. At the same time put the skin halves on a lightly greased baking tray and bake them for about 15 minutes or until crisp. When the potato mixture is done I scoop it into the crispy skins and top with a bit more shredded cheese (and crispy bacon if desired) and pop them onto the same baking tray and return to the oven for about 5-10 minutes just to melt the cheese and crisp up. I like to serve this potato recipe in their skins because it makes a nice presentation and the skins can be eaten and are very tasty. My recipe is only for 3-4 potatoes so if needed double up.
